I made these tasty pancakes, and most of the family ate them. (minus my 4 year old) I added cheese to them to add a little more flavor. One could actually put anything in a blintz. Make it a taco blintz, fruit filled blintz....the possibilities are endless! This recipe made 9. I did not burn one!

1 cup flour
2 teaspoons sugar (optional)
1/2 teaspoon salt. (I left out)
4 eggs
2/3 cup milk
1/3 cup water
2 teaspoons melted butter or oil
1 lb ground meat
1 cup chopped onions (I used less and I used a grater)
Salt and pepper
Shredded cheese to taste. (cheddar and mozzarella are tasty)
- For the blintz, beat the eggs and milk together.
- Add flour, sugar and salt
- Add water and melted butter or oil
- Pour about 1/3 cup batter and tilt pan to cover bottom. (I sprayed Pam before making each new blintz)
- Blintz is done when the bottom is just starting to look brown, and no longer looks wet. No need to flip
- Slide off blintz. Put a piece of wax paper over each one to avoid sticking.
- Fry onion and add meat. Cook well. Add 2 tablespoons of flour for consistency if you would like.
- Add Salt, pepper and other seasonings along with cheese to taste. (I added a mixture of mild cheddar and mozzarella)
- Use 2-3 tablespoons of filling per blintz. Fold both sides and roll up.
- Bake at 400 for 8-10 minutes.
- You can serve with sour cream. I added more cheese on top to melt. It also tastes good with ketchup.
