Meat-Filled Blintzes




I made these tasty pancakes, and most of the family ate them.  (minus my 4 year old)  I added cheese to them to add a little more flavor.  One could actually put anything in a blintz.  Make it a taco blintz, fruit filled blintz....the possibilities are endless!  This recipe made 9.  I did not burn one!

1 cup flour
2 teaspoons sugar (optional)
1/2 teaspoon salt. (I left out)
4 eggs
2/3 cup milk
1/3 cup water
2 teaspoons melted butter or oil
1 lb ground meat
1 cup chopped onions (I used less and I used a grater)
Salt and pepper
Shredded cheese to taste. (cheddar and mozzarella are tasty)



  1. For the blintz, beat the eggs and milk together.
  2. Add flour, sugar and salt
  3. Add water and melted butter or oil
  4. Pour about 1/3 cup batter and tilt pan to cover bottom.  (I sprayed Pam before making each new blintz)
  5. Blintz is done when the bottom is just starting to look brown, and no longer looks wet.  No need to flip
  6. Slide off blintz.  Put a piece of wax paper over each one to avoid sticking.
  7. Fry onion and add meat.  Cook well.  Add 2 tablespoons of flour for consistency if you would like.
  8. Add Salt, pepper and other seasonings along with cheese to taste. (I added a mixture of mild cheddar and mozzarella)
  9. Use 2-3 tablespoons of filling per blintz.  Fold both sides and roll up.
  10. Bake at 400 for 8-10 minutes.
  11. You can serve with sour cream.  I added more cheese on top to melt.  It also tastes good with ketchup.
