Cornmeal Encrusted Fish Fillets

I served this fish with leftover pasta with tomato sauce, and a variety of vegetables... hence, since none of the items go with Cornmeal Encrusted Fish Fillets, I decided to picture the fish separately.  My mother used to call leftovers  must-gos...  Well, the must-gos were eaten, along with this delicious, and mild flavored fish.  Two of my three kids are picky fish eaters, and both of them loved this recipe!  I must say, this is the first cornmeal recipe where the topping stayed attached to the fish.  The salad dressing gave just a hint salty flavor.  (I used Ken's regular salad dressing...actually, I use nothing else)  Makes 4 large serving, 8 kid's sized servings.

Flour for dredging
2/3 cup Italian dressing
2 eggs
1 cup cornmeal
1/2 cup finely chopped fresh parsley
4 fish fillets (1 lb)


  • Place flour on plate
  • Beat eggs in bowl.  Add dressing and mix
  • Place cornmeal and parsley on another plate
  • Flour both sides of fish fillet with flour
  • Dip both sides of fish in dressing/egg mixture
  • Place both sides of fish in cornmeal/parsley mixture
  • Place in a greased pan
  • Bake at 400 degrees on middle rack for 30+ minutes  (until fish is flaky)

Parmesan Tilapia

This was quite yummy, quick and easy to make.  






Serves 8

1/2 cup Parmesan cheese
1/4 cup softened butter
3 tablespoons mayonnaise
2 tablespoons lemon juice
1/2 teaspoon pepper
1/4 teaspoon onion powder
1/8 teaspoon celery seed
2 lbs tilapia fillets


  • Grease broiling pan, or line pan with tin foil
  • Mix together cheese, butter mayonnaise and lemon juice.  Add pepper, onion powder and celery.  Mix well and set aside
  • Arrange fish single layer and broil for 2 minutes
  • Flip over fillets and broil for 2 more minutes
  • Remove from oven, and place mixture on top
  • Broil two or more minutes until topping is brown, and fish flakes easily with a fork

Teriyaki Salmon with Asparagus

I am honest,  I did not cook this for the kids.  It was their first day of school, so I asked them what they wanted for dinner.  They ate homemade pizza, while my husband and I ate this delicious dish. Easy to make, and healthy to boot.





Low-sodium teriyaki sauce
2 salmon fillets
1 bunch thin asparagus
Oil



  • Place washed fish in a zip-top bag and add 5 tablespoons of teriyaki sauce
  • Seal and marinade for 20 minutes
  • Spray large pan with non-stick cooking spray
  • Add fish, and cook for 5 minutes
  • Remove fish skin, lift up fish, and respray with nonstick spray.  Turn fish over and cook for an additional 5 minutes
  • When fish is done, remove from pan and keep warm
  • Add 2 teaspoons of oil and place cleaned asparagus in pan
  • Cook for 3 minutes
  • Add 1 tablespoon teriyaki sauce and coat asparagus
  • Serve warm, with fish

Parmesan Haddock Fillets

Oh so quick and easy, and delicious too.... I have nothing more to say. 




Serves 4


1 lb haddock fillet
1 tablespoon olive oil
1/4 cup mayonnaise
1 teaspoon brown mustard
3 tablespoons grated Parmesan cheese
Ground pepper to taste



  • Grease broiler pan
  • Lightly brush fillets with oil
  • Combine mayonnaise, mustard and cheese  
  • Spread mixture on fillets
  • Broil for approximately 10 minutes. (until fish is close to the point of flakiness)

Baked Deviled White Fish

I have never tasted a topping like this on fish.  It is rich and decadent.   The cream cheese makes a creamy base for the spices, herbs and bread crumbs.  I am serving this with steamed asparagus and creamed corn.

A definite winner!

Serves 6


1  1/2 lb white fish (I used Cod)
1  8 oz package softened cream cheese
2 tablespoons mayonnaise
2 tablespoons milk
1 tablespoon dry onion soup mix
1 tablespoon lemon juice
1 teaspoon dried, crushed tarragon
1 teaspoon dijon-style mustard
1  1/2 cups soft wheat bread crumbs
1 cup diced fresh parsley
1/2 cup freshly grated Parmesan cheese
1 teaspoon paprika


  • Cut fillets into 6 portions.  Arrange on a greased baking pan
  • In a small bowl, combine cream cheese, mayonnaise, milk, onion soup mix, lemon juice, tarragon and mustard
  • Spread cream cheese mixture on top of fillets
  • Bake at 450 degrees for 10 - 12 minutes (or until fish almost flakes with a fork)
  • While fish is baking, combine bread crumbs, parsley, Parmesan Cheese and paprika
  • Place on top of fillets and bake for an additional 3 to 4 minutes. (until crumbs are golden brown, and fish flakes easily with a fork)

Herbed Catfish

This picture does not due this recipe justice.  I was running late on cooking dinner, so  instead of taking a picture of a plate filled with potato and vegetable,  I just served dinner.  These are the last two pieces of fish that I just ate for lunch.   This fish is delicious and easy to make!

Serves 6







2 lbs catfish fillets  (I used catfish pieces...just as good and about $3.00 less a pound)
1 medium garlic clove
1 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
2 tablespoons chopped parsley
2 tablespoons melted butter
1/2 teaspoon pepper
3/4 teaspoon paprika
1/2 teaspoon dried basil
2 tablespoons lemon juice



  • Combine garlic and melted butter
  • Spread evenly over the bottom of a baking dish
  • Combine pepper, salt, paprika, thyme, basil and orgegano
  • Sprinkle herb mixture on both sides of fish
  • Arrange fish on butter
  • Drizzle with lemon juice
  • Bake 350 degrees for 15 - 18 minutes
  • Broil juices for 4 - 6 minutes
  • Pour pan juice over fish

Potato Encrusted Fish Fillets

I have to say, this is one tasty dish!  I got this recipe from another series that I have been reading.   The fish is crispy and light.  The recipe called for Chilean sea bass, but I used flounder.    I hope you enjoy!

This recipe is for 4 servings:



4   6-8 oz pieces of fish
1 cup flour
2 eggs
4 large russet potatoes  (I used whatever I had in the house)
4 tablespoons olive oil plus cooking spray
Salt and Pepper to taste



  • Butter and heat a 9 x 13 pan.  Preheat oven to 400 degrees bake
  • Wash and peel potatoes. Grate onto a large kitchen towel to remove moisture
  • Rinse and pat dry fish
  • Beat eggs in a blowl and place flour on a plate
  • Dip fillets in flour, egg and potato (top and bottom)
  • Place olive oil in a skillet on medium high and quickly brown salt and peppered fish on both sides
  • Place fish in 9 x 13 pan and bake for 10 minutes, or until fully cooked

Oven Catfish



Yes, there is a trend.  My family likes catfish.  (It happens to be my favorite fish)  This is a great recipe because it uses no oil or eggs.  It is crispy and delicious!




1 1/2 lb catfish fillets
1/2 cup yellow cornmeal
1 teaspoon paprika
1 teaspoon salt (or less, to taste)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 cup skim milk


  • Heat oven to 425. Place foil over baking pan and spray with Pam
  • Mix all spices into the cornmeal
  • Dip fish into milk and then coat with the cornmeal mix
  • Bake 15 minutes, or until flaky

Salmon With Garlic, Lemon, And Dill

 (adult-oriented recipe #1)

I have been in a cooking mood today!  This recipe is moist and delicious, Enjoy!!


1 lb salmon fillet
2 teaspoons butter
1 teaspoon olive oil
1 clove of minced garlic
Sea salt and freshly cracked pepper, to taste
Fresh dill (I used dried)
Lemon slices


  • Preheat oven to 450 degrees.  Line a baking sheet with foil and coat with cooking spray. Place the fish skin side down on the baking sheet.
  • Combine butter, olive oil and garlic together then spread evenly over the top of the fish.
  • Season with salt and pepper to taste.
  • Sprinkle dill over the fish followed by a layer of lemon slices. 
  • Bake for 10 minutes, or until the salmon flakes easily with a fork.  Serve immediately.

Pecan-Parmesan Fish Fillets



This recipe is easy, and it tastes like something served at a restaurant   For the kids, you may want to keep the pecans off the fish.  Make rice with broccoli (see below)  and Glazed Carrots with Cider (Dec. 21)  as accompanying side dishes.

1 cup long-grain brown rice, uncooked
1  14 oz can fat free reduced-sodium chicken broth
1 cup water
1 cup small broccoli florets
1/2 cup toasted pecans
1/3 cup grated Parmesan cheese
1/4 cup fresh parsley
3 tablespoons lemon juice, divided
1 tablespoon olive oil
4 tilapia fillets (1 lb)


  • Heat oven to 375.
  • Cook rice as directed on package, using broth and water and adding broccoli to the cooking liquid for the last 5 minutes of rice cooking time
  • Combine nuts, cheese, parsley, 2 tablespoons lemon juice and oil.  Place fish in single layer in shallow baking dish.  Place nut mixture on top of fish.  Drizzle with remaining lemon juice.  Bake 10-12 minutes, or until fish flakes easily with a fork.

Parmesan Catfish Nuggets



The reason why I use nuggets is because when I tried making this recipe with catfish fillets,  they tended to break into nuggets anyway;  besides,  nuggets tend to cost an average of 3.00 per pound less then fillets.  2 out of 3 kids in my house eat fish.  They love this easy recipe.  (goes great with Tarragon Oven Fries)

1 lb catfish nuggets
flour
grated Parmesan cheese
paprika


  • Heat oven to 400 degrees and spray pan with Pam
  • place 1/2+ cup of flour and 1/2 cup+ cheese in a plastic bag
  • Place washed and dried nuggets in bag and shake to coat
  • Place on pan and sprinkle with paprika
  • Bake for 20+ minutes, until slightly brown and crunchy.

See, it is that easy.
