This recipe is easy, and it tastes like something served at a restaurant For the kids, you may want to keep the pecans off the fish. Make rice with broccoli (see below) and Glazed Carrots with Cider (Dec. 21) as accompanying side dishes.

1 cup long-grain brown rice, uncooked
1 14 oz can fat free reduced-sodium chicken broth
1 cup water
1 cup small broccoli florets
1/2 cup toasted pecans
1/3 cup grated Parmesan cheese
1/4 cup fresh parsley
3 tablespoons lemon juice, divided
1 tablespoon olive oil
4 tilapia fillets (1 lb)
- Heat oven to 375.
- Cook rice as directed on package, using broth and water and adding broccoli to the cooking liquid for the last 5 minutes of rice cooking time
- Combine nuts, cheese, parsley, 2 tablespoons lemon juice and oil. Place fish in single layer in shallow baking dish. Place nut mixture on top of fish. Drizzle with remaining lemon juice. Bake 10-12 minutes, or until fish flakes easily with a fork.
