These are a delicious served warm any time of year.
2 lbs unpeeled red potatoes
1/3 cup water
2 minced garlic cloves
1/4 cup Italian dressing divided
1/4 cup mayonnaise
4 slices crisp, crumbled bacon
4 green onions thinly sliced
- Place potatoes in a microwavable dish with water and cover. Microwave on high for 8 minutes. Slice potatoes.
- Drain and add garlic and 2 tablespoons dressing to coat.
- Spray large baking sheet with heavy foil. Spoon mixture to center and double fold foil to seal.
- Grill 20 minutes or until potatoes are tender. Turn packet after 10 minutes.
- **I also baked these in the oven at 350. (times vary)
- Mix mayonnaise, plus two tablespoons of dressing and add to the potatoes, bacon and onions. toss and serve warm.
