Serves 4
1 lb haddock fillet
1 tablespoon olive oil
1/4 cup mayonnaise
1 teaspoon brown mustard
3 tablespoons grated Parmesan cheese
Ground pepper to taste
- Grease broiler pan
- Lightly brush fillets with oil
- Combine mayonnaise, mustard and cheese
- Spread mixture on fillets
- Broil for approximately 10 minutes. (until fish is close to the point of flakiness)
