Herbed Catfish

This picture does not due this recipe justice.  I was running late on cooking dinner, so  instead of taking a picture of a plate filled with potato and vegetable,  I just served dinner.  These are the last two pieces of fish that I just ate for lunch.   This fish is delicious and easy to make!

Serves 6







2 lbs catfish fillets  (I used catfish pieces...just as good and about $3.00 less a pound)
1 medium garlic clove
1 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
2 tablespoons chopped parsley
2 tablespoons melted butter
1/2 teaspoon pepper
3/4 teaspoon paprika
1/2 teaspoon dried basil
2 tablespoons lemon juice



  • Combine garlic and melted butter
  • Spread evenly over the bottom of a baking dish
  • Combine pepper, salt, paprika, thyme, basil and orgegano
  • Sprinkle herb mixture on both sides of fish
  • Arrange fish on butter
  • Drizzle with lemon juice
  • Bake 350 degrees for 15 - 18 minutes
  • Broil juices for 4 - 6 minutes
  • Pour pan juice over fish
