**Yes, this is a repeat from Jan. 3rd. I accidently deleted it this morning.
The reason why I say cocoa or not is because my husband and I liked it with the cocoa, my kids did not. They decided that if I leave the cocoa out, then they will eat it. Who would have thought, kids not liking cocoa? I like this recipe because it is slightly spicy and sweet with a touch of chocolate flavoring. The combination of chocolate and cinnamon make this a delicious dish. (and very moist!!)
1 lb boneless, skinless chicken breast (I used thighs, it worked fine)
1 teaspoon olive or canola oil
1 teaspoon crushed garlic
1/2 teaspoon orange zest (I used a little more)
1 tablespoon light brown sugar, lightly packed
1 tablespoon unsweetened cocoa powder (or not)
1 teaspoon chili powder (I used about half because of the kids, I would have liked the full amount)
1/2 teaspoon cinnamon
1/8 teaspoon cumin
- Heat oven to 375
- Lightly spray baking dish with Pam
- Rub chicken with oil, garlic and orange zest
- Combine remaining ingredients and spread evenly over chicken
- Bake for 25 minutes, or until internal temperature reaches 165 degrees on a meat thermometer.
