Orange Ginger Bars (Reduced Fat)

This may be reduced fat, but not reduced in calories.  These are spicy with a strong hint of fresh orange.  I added the dollop of whipped cream for aesthetics purposes only.  These could be made into wafers instead of bars if you would like.  I hope you enjoy!




2 cups flour
2 teaspoons baking powder
 1/4 teaspoon baking soda
1/2 teaspoon ginger
1/8 teaspoon ground cloves
3/4 cup sugar
2  1/2 teaspoons finely grated orange zest
1 teaspoon finely grated lemon zest
2  1/2 tablespoons unsalted butter, softened
3 tablespoons oil
1 large egg
1/4 cup light or dark molasses
2  1/2 teaspoons vanilla



  • Heat oven to 375 bake.  Spray 9 x 13 pan with cooking spray
  • Whisk flour, baking powder, baking soda, ginger and cloves
  • In a separate bowl: at medium speed, beat sugar, orange zest, lemon zest, oil and butter until well blended
  • Add and beat egg, molasses and vanilla 
  • Gradually add to flour mixture until well blended and smooth
  • Place batter in pan and place in top 2/3 rack of oven
  • Bake between 40 and 45 minutes or until toothpick comes out clean
