Sweet Potato Ginger Cookies

If you take away all of the sugar and butter, then these cookies are good for you!  I had some left over sweet potatoes which I decided to cook.  These would also taste good with raisins or one pecan on the top/middle of each cookie.   Kid approved! (my 4 year old got hold of them, and snuck 4 before I could stop him)




1  1/2 cups all purpose flour
1 cup old fashioned oats
1 teaspoon baking soda
1  1/2 cup baking powder
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 tablespoon fresh grated ginger
Zest of 1 orange
1 stick unsalted butter at room temperature
3/4 cup light brown sugar, packed
1/2 cup granulated sugar
1 egg at room temperature
1 cup cooked, mashed sweet potato
1 teaspoon vanilla extract


  • Preheat oven to 350 degrees
  • In a bowl, combine flour oats, baking powder, baking soda and nutmeg.  whisk to combine.  Set aside
  • In a mixer, cream sugars and butter until smooth
  • Add sweet potato, ground ginger, orange zest and vanilla.  Continue to mix
  • Add the egg and mix
  • Slowly add the flour mixture until dough forms
  • On either a parchment-lined or cooking sprayed baking sheet, drop spoonfuls of dough. (my recipe made almost 3 dozen)
  • Bake 12+ minutes until the edges are golden brown (since my cookies were a little larger,  each batch took close to 15 minutes to bake
