1 1/2 cups all purpose flour
1 cup old fashioned oats
1 teaspoon baking soda
1 1/2 cup baking powder
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 tablespoon fresh grated ginger
Zest of 1 orange
1 stick unsalted butter at room temperature
3/4 cup light brown sugar, packed
1/2 cup granulated sugar
1 egg at room temperature
1 cup cooked, mashed sweet potato
1 teaspoon vanilla extract
- Preheat oven to 350 degrees
- In a bowl, combine flour oats, baking powder, baking soda and nutmeg. whisk to combine. Set aside
- In a mixer, cream sugars and butter until smooth
- Add sweet potato, ground ginger, orange zest and vanilla. Continue to mix
- Add the egg and mix
- Slowly add the flour mixture until dough forms
- On either a parchment-lined or cooking sprayed baking sheet, drop spoonfuls of dough. (my recipe made almost 3 dozen)
- Bake 12+ minutes until the edges are golden brown (since my cookies were a little larger, each batch took close to 15 minutes to bake
