Cheesy Chicken Baked In Phyllo

This is more of an adult recipe.  I loved it!  My husband liked it until I told him that the sauce contained beer.  To me, the sauce has a similar flavor to that of cheese fondue... delicious!   This recipe requires many steps.  Well worth it in my book!  I used Mexican mixture cheese, but it would also taste good with cheddar.  I could see substituting chicken for cooked shrimp. 

A single recipe serves 2 - 4 people. In our case, it served two adults and 3 children.

2 large boneless chicken breasts, cubed
1 - 2 tablespoons olive oil
1/2 teaspoon salt (I used it)
1 teaspoon pepper
1 cup freshly cooked broccoli florets
9 to 10 sheets phyllo dough

Cheese Sauce:

2 tablespoons butter
1 tablespoon flour
6 oz beer
1 cup whole milk
2 cups shredded cheese
Ground pepper to taste 



  • Preheat oven to 375 bake
  • Brown chicken with olive oil
  • While chicken is cooking, sprinkle with salt and pepper.  Cook through and then set aside
  • For the cheese sauce, melt butter over low/medium heat
  • Stir in flour to make a thick paste
  • Add beer slowly while stirring
  • Add milk
  • Add cheese, a little at a time while constantly stirring
  • Once cheese is melted, turn heat to low
  • Grease bottom and sides of a 9 x 12 inch baking pan
  • Lay down 3 sheets of phyllo
  • Add chicken and pour half of sauce over
  • Lay 3 phyllo sheets over chicken and add broccoli
  • Add remaining cheese sauce
  • Place remaining phyllo sheets over sauce
  • Drizzle a little olive oil on top to help brown
  • Bake for 35 minutes
