A single recipe serves 2 - 4 people. In our case, it served two adults and 3 children.
2 large boneless chicken breasts, cubed
1 - 2 tablespoons olive oil
1/2 teaspoon salt (I used it)
1 teaspoon pepper
1 cup freshly cooked broccoli florets
9 to 10 sheets phyllo dough
Cheese Sauce:
2 tablespoons butter
1 tablespoon flour
6 oz beer
1 cup whole milk
2 cups shredded cheese
Ground pepper to taste
- Preheat oven to 375 bake
- Brown chicken with olive oil
- While chicken is cooking, sprinkle with salt and pepper. Cook through and then set aside
- For the cheese sauce, melt butter over low/medium heat
- Stir in flour to make a thick paste
- Add beer slowly while stirring
- Add milk
- Add cheese, a little at a time while constantly stirring
- Once cheese is melted, turn heat to low
- Grease bottom and sides of a 9 x 12 inch baking pan
- Lay down 3 sheets of phyllo
- Add chicken and pour half of sauce over
- Lay 3 phyllo sheets over chicken and add broccoli
- Add remaining cheese sauce
- Place remaining phyllo sheets over sauce
- Drizzle a little olive oil on top to help brown
- Bake for 35 minutes
