Boston Brown Bread

When I was a kid, my mother used to buy Boston Brown Bread that came in a can.  She used to serve it with ham slices and baked beans.  Though I found several recipes online using a can instead of pan,  I opted for this recipe.  It takes two days to make, but is worth it!  This would be delicious alone with butter or with hotdogs and coleslaw.  (to heavy to be used for breakfast)

Makes 1 loaf

1 cup sugar
1  1/2 cups raisins
2 teaspoons baking soda
1 teaspoon salt
1 tablespoon margarine
1  1/2 cup boiling water
1 egg
2 cups flour

  • In a large bowl, mix together sugar, raisins, baking soda, salt, margarine and boiling water
  • Cover and let stand overnight
  • The following day, preheat oven to 350 degrees
  • Lightly grease a loaf pan (9 x 5 inches)
  • Beat egg and flour into mixture.  Pour batter into pan
  • Bake for 1+ hours. (until toothpick inserted in center of loaf comes out clean)
