Baked Brown Rice Balls

My two older children like rice.  Unfortunately, fork, spoon etc... most of the rice doesn't reach their mouths.  With Rice balls,  the rice sticks to their forks.  Easy to make, quite tasty.  These would taste good with marinara sauce too.



Makes 12 balls

4 cups cooked brown rice, cooled
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon Italian Seasoning
1 teaspoon minced onions
2 eggs
1/4 cup plain bread crumbs
Olive oil


  • In a large bowl, combine everything except  olive oil.  Mix well
  • Using two tablespoons of the rice mixture,  roll into balls and place on a greased baking sheet
  • If the rice becomes sticky while forming the balls,  place cold water on your hands
  • Drizzle some olive oil over the rice balls
  • Bake at 325 for 25 minutes; until slightly brown and crispy
