Makes 12 balls
4 cups cooked brown rice, cooled
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon Italian Seasoning
1 teaspoon minced onions
2 eggs
1/4 cup plain bread crumbs
Olive oil
- In a large bowl, combine everything except olive oil. Mix well
- Using two tablespoons of the rice mixture, roll into balls and place on a greased baking sheet
- If the rice becomes sticky while forming the balls, place cold water on your hands
- Drizzle some olive oil over the rice balls
- Bake at 325 for 25 minutes; until slightly brown and crispy
