Cantaloupe Nut Quick Bread

I bet you have never heard of bread made out of cantaloupe before....  This is actually a somewhat healthy bread which can be served for breakfast.  I substituted the entire oil for unsweetened applesauce, so the bread is a bit chewier.  I also cut the sugar in half.  Though there is minimal cantaloupe flavor, but the spices and pecans give it a nice flavor.  Serve with cream cheese.

Makes 1 loaf


  • 1/2 cup unsweetened applesauce
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup pureed cantaloupe
  • 2 cups sifted flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice (1/4 teaspoon ginger, 1/8 teaspoon allspice or cloves, 1/8 teaspoon nutmeg)
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup raisins

  • In a bowl, mix applesauce and sugar well
  • Beat in eggs
  • Mix in cantaloupe
  • Sift together flour, baking powder, baking soda and spices
  • Mix into the creamed mixture
  • Fold in nuts and raisins
  • Add to greased and floured bread pan
  • Bake at 325 bake for 45 minutes, or until a toothpick stuck in the center of the bread comes out clean
  • Place on a rack to cool before removing from pan
