Juicy Crock Pot Balsamic Chicken

I still need to work on my presentation skills.  Easy, spicy and low cal.  What I like is, I didn't need to heat the house up because I used a crock pot.  (Instead, I am using the oven to bake a blueberry apple pie)  I had 2 kids home for supper, and I got a double thumbs up.  


Serves 8

1 teaspoon garlic powder
1 tablespoon fresh basil (or 1 teaspoon dried)
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons dried, minced onion
4 minced garlic cloves
1 tablespoon olive oil
1/2 cup balsamic vinegar
8 boneless, skinless chicken thighs
Fresh parsley


  • Combine garlic powder, basil, salt, pepper and onions in a small bowl
  • Wash chicken and spread mixture on both sides of chicken.  Set aside
  • Pour olive oil and minced garlic on the bottom of the crock pot
  • Place chicken in crock pot
  • Pour balsamic vinegar over chicken
  • Cover and cook on high for 4 hours
  • Sprinkle fresh parsley on top and serve
