Crockpot Chicken with Lemon and Fresh Rosemary

Quick, and easy with a bit of zip to it!  The recipe calls for smoked paprika as optional   I happen to have a bottle in the house.  (and might I say,  recipes don't call for it very often, so don't go out and buy it just for this recipe)  I served this with wheat egg noodles and fresh string beans.  Very juicy,  the kids loved it!

Family pack of chicken (with skin and bones)  I used 10 thighs
1 lemon, juice of (plus zest)
1 tablespoon smoked paprika (optional)
3 minced garlic cloves
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon black pepper
1 sprig fresh garlic

  • Place  chicken in large crockpot.  (I had to layer chicken)
  • Pour lemon juice and zest over chicken
  • Sprinkle with paprika, garlic, red pepper flakes, salt and pepper
  • Top with rosemary sprig
  • Cook on low for approximately 8 hours, or until chicken reaches an internal temperature of 180 degrees
