1 lb boneless, skinless chicken breasts or thighs
Zest of 1 orange
Juice of 1 orange (1/3 or 1/2 cup)
1 cup flour
1 tablespoon smoked paprika (I happen to have a bottle in the house. From Penzeys Spices)
2 teaspoons salt
2 to 3 tablespoons olive oil
1 1/2 tablespoons brown sugar
- Preheat oven to 350 bake
- Place chicken pieces in a heavy storage bag, and pound to 1/2 inch, to make them thinner
- Combine flour, paprika and salt on a plate
- Flour both sides of chicken
- Heat oil in a skillet
- Place chicken in oil and brown 2 minutes on each side
- Remove chicken and place in greased 9 x 13 baking pan
- Scrape brown bits in skillet and pour in orange juice and mix together to form a glaze
- Pour over chicken
- Sprinkle top of chicken with orange zest and brown sugar
- Bake 30 minutes, or until chicken reaches an internal temperature of 165 degrees
