Orange Brown Sugar Chicken

The holidays are over, so I am back cooking again!  I like this particular recipe because of it's 'orangy' smell, and it's 'restaurant quality' flavor.  Easy to make, great hot, or served cold the next day.  You can't go wrong with this recipe!

4 servings

1 lb boneless, skinless chicken breasts or thighs
Zest of 1 orange
Juice of 1 orange  (1/3 or 1/2 cup)
1 cup flour
1 tablespoon smoked paprika (I happen to have a bottle in the house.  From Penzeys Spices)
2 teaspoons salt
2 to 3 tablespoons olive oil
1  1/2 tablespoons brown sugar

  • Preheat oven to 350 bake
  • Place chicken pieces in a heavy storage bag, and pound to 1/2 inch, to make them thinner
  • Combine flour, paprika and salt on a plate
  • Flour both sides of chicken
  • Heat oil in a skillet
  • Place chicken in oil and brown 2 minutes on each side
  • Remove chicken and place in greased 9 x 13 baking pan
  • Scrape brown bits in skillet and pour in orange juice and mix together to form a glaze
  • Pour over chicken
  • Sprinkle top of chicken with orange zest and brown sugar
  • Bake 30 minutes, or until chicken reaches an internal temperature of 165 degrees
