Cocoa Cookies

Let's be honest, everything tastes good with Hershey's unsweetened cocoa..............this recipe is no exception.    My friend's son came over yesterday, so I wanted to bake a quick, easy, yet special cookie.  This recipe made 20 cookies.  I ate one, while my 3 kids, and their friend ate the rest with in 5 minutes. Proves my point that this is one good recipe!  You may consider making a double batch for your clan.


1/2 cup softened butter
1/2 cup brown sugar
1/4 cup white sugar
1 egg
1 teaspoon vanilla extract
1 cup flour
1/4 cup cocoa powder
1/2 teaspoon baking soda
1/8 teaspoon salt



  • Preheat oven to 350 degrees.  Place parchment paper on a baking sheet
  • Mix together butter and sugars until light and fluffy
  • Add egg and vanilla, and mix until combined
  • Using a separate bowl, sift flour, cocoa powder, baking soda and salt
  • Add dry ingredients into wet ingredients, and mix until well incorporated
  • Make truffle-sized balls and place on pan
  • Bake 8 minutes, or until the tops start rippling just a little bit
  • Let them cool
