I had ripe bananas and some aging strawberries. This is the result. I couldn't resist taking the picture with my island decorations. (the colors went well together) Below, I posted a picture of what my youngest son did to my bread when I was upstairs folding laundry. (I have learned to take pictures at the earliest possible time; just for this reason) Regardless, the loaf is more then half finished already. My other son tasted it and said "mmmmm!"
6 tablespoons unsalted butter, melted
2 cups flour
3/4 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoons cinnamon
2 eggs
1 teaspoon vanilla extract
1/4 cup buttermilk (1/4 cup milk + 1/4 teaspoon white vinegar)
3 medium ripe bananas, mashed
1/2 cup diced strawberries, plus thinly sliced berries for topping
- Melt butter and place it in a small bowl, set aside to cool
- Using a large bowl, mix together, flour, sugar, baking soda, salt and cinnamon
- Use a medium bowl, and mix together eggs, vanilla, buttermilk mashed bananas and strawberries
- Add wet mixture to dry mixture and mix
- Place mixture into a cooking sprayed and floured baking pan
- Place sliced strawberries on top
- Place pan on middle shelf in a preheated 350 degree oven
- Bake 55+ minutes, or until the a toothpick inserted into the middle comes out clean
- Let cool on a rack. Remove from pan and continue cooling.
