Sweet Potato Biscuits



While we are on the subject of sweet potatoes,  these are simply delicious!  They are quick to make, and a great variation from traditional biscuits.

2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt.  (I leave this out)
6 tablespoons diced cold butter
3/4 cups mashed sweet potato.  (I mash while still very warm)
1/4 cup buttermilk.  (to make your own,  add 1 tablespoon of white vinegar to 1 cup of milk and let sit for 5 minutes)  I used to buy buttermilk, and it always went bad before I could use it up.
2 tablespoons sugar


  • Preheat oven to 425 degrees.  In a large bowl, combine flour, baking powder and salt.  Cut butter until only pea-size lumps remain
  • In a 2nd bowl, whisk together mashed sweet potatoes, buttermilk and sugar
  • Add flour mixture, and mix with your fingers until just combined
  • On a floured surface, gently press dough to a 3/4 inch thick circle.  Cut out 2 1/2 rounds, brush with melted butter, and bake on a greased baking pan until golden brown on the bottom, and puffed, about 20 minutes.
