See, I was right, directly following the ham loaf recipe..... (or chunk and clunk if you don't have a meat grinder) This believe it or not is a Weight Watcher's Recipe. It is sweet and filling; a great healthy, fall and winter side dish. This recipe serves 4.
2 large sweet potatoes, washed and patted dry
1 teaspoon olive oil
1/2 teaspoon salt
1/4 teaspoon crushed, dried rosemary
Rosemary sprig to garnish (optional)
- Preheat oven to 425
- Cut each potato into 8 lengthwise wedges and place on a nonstick baking sheet
- Drizzle with oil; sprinkle with oil; sprinkle with salt and dried rosemary
- Roast for 15 minutes, toss and roast until tender, about 15-20 more minutes
- Garnish with rosemary
