3 tablespoons olive oil
1 1/2 lbs potatoes
Coarse sea salt

1 1/2 tablespoon fresh, minced tarragon
1 1/2 tablespoon fresh, minced tarragon
- Heat oven to 450 and coat pan with 2 tablespoons oil
- Slice potatoes 3/8 thick like thin matchsticks
- Place in cold water and simmer for 5 minutes
- When half way done, drain with a slotted spoon and pat dry
- Heat pan for 3-4 minutes and then drizzle olive oil and spices in pan. Add potatoes and mix
- Bake 25 minutes, mix and bake for another 10-20 minutes
