Tarragon Oven Fries

I have nothing else to say except that these are wonderful!!  



3 tablespoons olive oil
1  1/2 lbs potatoes
Coarse sea salt
Pepper
1  1/2 tablespoon fresh, minced tarragon


  • Heat oven to 450 and coat pan with 2 tablespoons oil
  • Slice potatoes 3/8 thick like thin matchsticks
  • Place in cold water and simmer for 5 minutes
  • When half way done, drain with a slotted spoon and pat dry
  • Heat pan for 3-4 minutes and then drizzle olive oil and spices in pan.  Add potatoes and mix
  • Bake 25 minutes, mix and bake for another 10-20 minutes
