Biscotti is one of the easiest cookies to make. There are so many different recipe variations; I hope you like these. They taste great with a cup of coffee! I signed up to make a dessert for Saturday's Cub Scout's Pinewood Derby....I am sure adults and kids alike will enjoy this tasty treat!
1/4 cup butter or margarine softened
2/3 cup sugar
2 eggs
1 teaspoon vanilla or almond extract
2 cups flour
2 teaspoons baking powder
1 cup almonds or 3/4 cup mini chocolate chips
- Heat oven to 350 degrees
- Beat together butter, sugar, eggs and vanilla
- Stir in flour, baking powder and cinnamon.
- Stir in almonds or chocolate chips
- Divide dough in half and shape into 2 long 1 1/2 inches in diameter
- Place on a greased baking sheet; flatten slightly
- Bake 18-20 minutes until firm
- With a sharp knife, cut loaves diagonally into 3/4 inch thick slices
- Place cut side down on baking sheet
- Bake 10 minutes longer or until lightly browned
Makes 2 1/2 dozen
