Italian Almond or Chocolate Chip Biscotti



Biscotti is one of the easiest cookies to make.  There are so many different recipe variations;  I hope you like these. They taste great with a cup of coffee!  I signed up to make a dessert for Saturday's Cub Scout's Pinewood Derby....I am sure adults and kids alike will enjoy this tasty treat!

1/4 cup butter or margarine softened
2/3 cup sugar
2 eggs
1 teaspoon vanilla or almond extract
2 cups flour
2 teaspoons baking powder
1 cup almonds or 3/4 cup mini chocolate chips


  • Heat oven to 350 degrees
  • Beat together butter, sugar, eggs and vanilla
  • Stir in flour, baking powder and cinnamon.
  • Stir in almonds or chocolate chips
  • Divide dough in half and shape into 2 long 1  1/2 inches in diameter
  • Place on a greased baking sheet; flatten slightly
  • Bake 18-20 minutes until firm
  • With a sharp knife, cut loaves diagonally into 3/4 inch thick slices
  • Place cut side down on baking sheet
  • Bake 10 minutes longer or until lightly browned
Makes 2  1/2 dozen
