Nonna's Chicken

This chicken is moist, delicious, and low in calorie.  it uses no butter or oil.  Lemon, combined with fresh herbs are the key to this recipe.  Cooking with the skin on keeps the chicken moist. (I remove it before I eat it)  My grandmother (the one who made Nonna's Stringbeans,  December 23, 2012) always made this recipe with chicken legs and thighs,  so that is what I use.  Serve this recipe with Sour Cream/Cream Cheese Mashed Potatoes (next recipe)



1 cut up chicken
Black pepper, paprika, onion powder  to taste
Fresh tarragon, plenty of sage and parsley (sage is my favorite!)
1/2 squeezed lemon


  • Place chicken skin side up in baking sheet
  • Squeeze lemon juice on. Sprinkle with spices and herbs
  • Bake at 400 degrees for 1 hour, basting occasionally
