I made the Chocolate Chip Biscotti for tomorrow's Pinewood Derby. I decided that one batch was not enough. I thought the orange flavor would compliment the chocolate. Try one with a cup of coffee.
1 cup sugar
1/2 cup unsalted butter (room temperature)
2 large eggs
2+ teaspoons grated orange peel (add more to taste)
1/2 teaspoon vanilla extract
2 cups flour
1 1/2 teaspoons baking powder
1 to 1 1/2 teaspoons ground cinnamon
- Preheat oven to 325 degrees. Butter 2 baking sheets
- Beat sugar and butter in a large bowl until well blended
- Add 1 egg at a time, beating well
- Beat in orange peel and vanilla
- Stir in flour, baking powder and cinnamon
- Mix all ingredients until just incorporated
- Divide dough in half Place each on a prepared sheet
- With lightly floured hands, form each half into a 3 inch wide by 3/4 inch height log
- Bake dough until logs are firm to touch, about 35 minutes
- Remove from the oven. Use a serrated knife to cut 1/2 inch thick pieces diagonally.
- Arrange cut side down on baking sheets
- Bake about 12 more minutes. Turn biscotti over and bake until cookies are firm and just beginning to brown
- Transfer to a rack to cool
