Lemon and Herb Whole Grain Rice With Petite Peas



This is a very colorful dish which not only nutritious, but delicious.
Adding the juice of half a lemon along with some uncooked shrimp would make a tasty meal.





1 pouch of 2 cup Whole Grain Boil in a Bag brown rice
3 tablespoons butter, softened
3 garlic cloves, minced
Zest from 1 lemon
1 cup frozen petite peas
1/2 cup fresh basil cut into thin strips (or more to taste) **It loses flavor if dried is used                                                  

  • Cook rice per package directions.  Drain and set aside, keep warm
  • In a large saute pan, melt 2 tablespoons butter.  Add garlic and lemon zest until garlic is softened, but not brown
  • Add peas, basil and remaining butter and cook until peas are warmed
  • Add peas mixture to warmed rice and serve
It is that easy!
