Applesauce Banana Bread with Chocolate Chips

Yes, another banana bread recipe.  My family likes quick breads, so I am trying different recipes using unsweetened applesauce versus oil and or butter.  The result is a lighter, yet very tasty bread.  (as always, the loaf lasted under 2 days in my house)  I had 6 bananas, so I made 1  1/2 recipes in a bundt pan. (that explains the odd shape of the piece in the picture)  Chocolate chips are optional.






4 ripe bananas
1 cup sugar
1/2 cup applesauce (the bread has enough sugar,  I used unsweetened)
1 teaspoon vanilla extract
2 eggs
1 teaspoon baking soda
1 tablespoon baking powder
2 cups flour


  • Preheat oven to 350 degrees bake
  • Place the bananas in a large bowl and mash with an electric mixer
  • Stir in sugar and let stand for 15 minutes
  • Add applesauce and eggs, beat well
  • Add the remaining ingredients and mix well
  • Pour into a greased 9 x 5 loaf pan
  • Bake for 45 minutes, or until toothpick inserted in the center comes out clean
  • Remove from oven and let stand 10+ minutes before removing from pan, cool on wire rack
