Herb Parmesan Popovers

Tasty and light,  a nice alternative to bread or potato.  
I planted my herbs on Memorial Day in my mother's many window boxes.  I used fresh sage in this recipe;  Oh so good!

Since I didn't have a popover pan,  I used a regular muffin tin. This recipe made 8 popovers.



1 cup whole milk
2 large eggs
2 tablespoons unsalted butter, melted plus more for pan coating
1 cup flour
1/2 cup Parmesan cheese
2 teaspoons finely chopped herbs:  rosemary, thyme or sage (If using dried, cut down to 1 teaspoon)


  • Preheat oven to 450 degrees, and place oven rack in the center
  • Coat muffin tins with melted butter
  • Once oven is fully heated, place muffin tin in oven for 7 minutes
  • Whisk together eggs, milk, melted butter and flour until well blended
  • Add herbs and cheese, blend well
  • Remove pan from oven and pour batter evenly in cups
  • Return pan to oven and bake for 15 minutes
  • Reduce heat to 400 degrees and continue baking until popovers are puffed and golden brown
  • Remove from oven and cool on a rack.  Serve hot
