Maple Pecan Chicken

This is Sunday dinner.  Maple Pecan Chicken, Roasted Zucchini and Summer Squash with Amish Noodles.  All 3 recipes are easy to make.  My 9 year old daughter is taking after me, she     helped me cook this entire meal.

This dish  is slightly sweet with a nice crunch to it.  Enjoy!



1 1/2 chicken legs (skin removed) 
1/4 cup maple syrup
2 tablespoons mayonnaise (I used Hellman's light)
1/2 cup plain Panko bread crumbs
1/2 cup finely chopped pecans
A pinch of salt, pepper and paprika


  • Heat oven to 400 degrees.  Line a baking sheet with foil; spray with cooking spray
  • In a bowl, mix together maple syrup and mayonnaise
  • In a plastic bag, mix bread crumbs, pecans and spices
  • Dip chicken into maple syrup mixture and then shake in bag, covering entire piece of chicken
  • Bake for approximately 50 minutes, or until a meat thermometer registers 165 degrees, and when cut, juices run clear, not red
  • **(using other cuts of chicken will change cooking time)
