Makes 36 cookies (this recipe is from the blog The Skinny Fork)
2 ripe bananas
1/3 cup regular or reduced fat peanut butter
2/3 cup unsweetened applesauce
1 teaspoon vanilla
1/2 teaspoon cinnamon
Dash of ground cloves
Dash of ground nutmeg
1 1/2 cup quick or old fashioned oats
1/4 cup low salt peanuts (optional)
1/4 cup semi sweet chocolate chips (optional)
1/4 cup reduced fat unsweetened shredded coconut (optional)
- Preheat oven to 350 degrees
- Line a baking sheet with parchment paper
- Blend together bananas, peanut butter, applesauce, vanilla and spices
- Add oats, nuts, chocolate chips and coconut; stir until well combined
- Spoon a rounded tablespoon of mixture onto baking sheet (leaving 1+ space between each cookie)
- Bake for 20+ minutes
- Cool on a baking rack
