Roasted Potatoes Slices

The picture does no justice to this recipe.  This is not a low calorie recipe, but it sure is good!  I served this with meatloaf and vegetables for dinner.

This is one of the few recipes where I did not put in measurements or quantities.... I call it "eye balling."

I hope you enjoy!


Medium sized peeled potatoes
Olive oil
Melted butter
Sea salt 
Pepper



  • Peel potatoes, and cut in slices, almost the whole way though
  • Drizzle oil and butter
  • Sprinkle salt and pepper
  • Bake at 425 degrees for 40 minutes, or until cooked all the way through
**The potatoes will have a nice crunch on the outside.  My potatoes took a little longer to cook, since I put less slices in them.
