This is one of the few recipes where I did not put in measurements or quantities.... I call it "eye balling."

Medium sized peeled potatoes
Olive oil
Melted butter
Sea salt
Pepper
- Peel potatoes, and cut in slices, almost the whole way though
- Drizzle oil and butter
- Sprinkle salt and pepper
- Bake at 425 degrees for 40 minutes, or until cooked all the way through
**The potatoes will have a nice crunch on the outside. My potatoes took a little longer to cook, since I put less slices in them.
