Serves 4 to 6
1 1/2 lb lean ground beef
1 small onion, chopped
1 chopped garlic clove
1/2 teaspoon pepper
8 oz sliced white mushrooms
4 oz light cream cheese
2 cups low sodium beef broth
1/2 cup low fat milk
3 tablespoons flour
1/2 cup light sour cream
Salt and more pepper to taste
Grated cheese
Fresh parsley (optional)
Cooked noodles
- Spray nonstick cooking spray in a large pan
- Cook meat, onion, garlic and pepper on medium-high until only slightly pink
- Drain excess grease
- Add mushrooms and cook for another 5 minutes
- Add cream cheese and let melt, stirring occasionally
- Combine beef broth and milk in a large bowl
- Whisk in flour until there are no lumps
- Stir liquid mixture into ground beef, stirring occasionally
- Let mixture bubble and simmer until slightly thickened
- Stir in sour cream, and additional salt and pepper
- Serve over hot noodles
- Sprinkle cheese and parsley over sauce
