Honey Lime Chicken Thighs

I like to buy ingredients, and then figure out what to make with them.  In this case, I had limes in the fridge, and a jar of honey.  My kids like simple, no-frill, juicy chicken, and here it is.  The secret is to baste every 15  minutes.  Easy to make, and delicious.  The ingredient ratios represent 4 chicken thighs.  Due to the quantity that I  happen to cook today,  I more than doubled the glaze.



4 chicken thighs (or half breasts)
1/4 cup olive oil
1 tablespoon honey
1 tablespoon freshly squeezed lime juice
1/4 teaspoon paprika
Salt, garlic powder, onion powder and pepper to taste


  • Spray a baking dish with nonstick spray
  • Wash and arrange chicken, skin side up on pan
  • Sprinkle lightly with salt, garlic powder, onion powder and pepper
  • Place olive oil, honey, lime juice and paprika in a small pan
  • Warm over low heat just until honey is melted
  • Baste over chicken
  • Cook at 400 degrees for 50+ minutes, or until chicken reaches 165 degrees, and there is no pink left
  • Baste every 15 minutes
