Herb and Citrus Oven Roasted Chicken

It's a cold and snowy day in Pomfret?  I was home all day with the kids, so it was the perfect time to cook!  (actually, it always a perfect time to cook)  A light citrus taste.  Served with Pasta with Lemon and Garlic.  (my next posting)


Delicious!


4 lbs chicken legs and thighs 
1/4 cup olive oil
4 minced garlic cloves
2 lemons:  one juiced and one sliced
2 oranges: one juiced and one sliced
1 tablespoon Italian seasoning
1/2 teaspoon paprika
1 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
Salt and pepper to taste
1/2 medium onion thinly sliced
1 tablespoon dried rosemary


  • In a bowl, whisk together olive oil, garlic, lemon juice, orange juice, Italian seasoning, paprika, onion powder and red pepper flakes
  • Place chicken skin side up in a greased baking dish
  • Pour mixture over chicken, coating both sides
  • Arrange lemon, orange and onion slices around and under chicken
  • Sprinkle with rosemary, salt and pepper
  • Bake at 400 degrees uncovered for 1 hour, or until juice of chicken runs clear
