Easy and delicious!
Makes 6 servings
12 skinned drumsticks or thighs
28 oz can crushed tomatoes (no added spices)
2 tablespoons cornstarch
1 tablespoon grated fresh ginger
1 tablespoon chopped, fresh parsley
4 minced garlic cloves
2 teaspoons brown sugar
1/2 teaspoon crushed red pepper
1/2 teaspoon salt (optional)
- Place prepared chicken in a 4 quart crockpot
- In a medium sized bowl, mix together tomatoes, cornstarch, ginger, parsley, garlic, brown sugar, red pepper and salt
- Pour over chicken
- Cover and cook on low for 6 hours, or high for 3 hours
