1/2 cup softened unsalted butter
1 cup sugar
1 room temperature egg
4 mashed ripe bananas
1 teaspoon baking soda
2 cups flour
pinch of salt
1/2 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon nutmeg
1 cup raisins
- Cream together butter and sugar. Add egg and beat until light and fluffy
- Add bananas and baking soda. Let sit for 2 minutes
- Add in flour, salt and spices. Mix until combined
- Fold in raisins
- Using a 9 x 13 inch baking pan, spray with nonstick baking spray. Add cake mixture and bake at a 350 degrees until a toothpick inserted in the middle comes out clear. 40-50 minutes
