Chocolate Silk Pie



Yes, I made it for Christmas.  Yes, I ate 3 pieces, and yes, I am starting my diet again on December 27th!  In case you have not figured it out, chocolate is my favorite food!  Do you know that I actually have a relative who does not like chocolate?  I had never heard of such a thing! If you are like me,  you will love this buttery, chocolate pie crust with a thick mousse-like filling....we have 2 pieces left in the house, and I bet they will taste good frozen.  (Out of sight, out of mind... ha!  I know you are the freezer.....)

Pie Crust

30 chocolate wafers 
4 tablespoons unsalted butter melted and cooled


  • Heat oven to 350 degrees and place rack in the middle
  • Place cookies in a food processor and process until pea size
  • Stop motor and add melted butter until mixture is about the size of coarsely ground coffee. about 1 1/2 cups
  • Place in 9 inch pie pan.  Using the bottom of a cup or your fingers, press firmly and evenly  into the bottom and the sides
  • Bake 10 - 15 minutes.  Cool completely before filling

Chocolate Silk Pie

1 cup semisweet chocolate chips
1 stick butter
1 cup sugar
pinch of salt (I left this out)
1 tablespoon unsweetened cocoa powder
3 eggs
2/3 cup evaporated milk
1 teaspoon vanilla

  • Heat oven to 350 degrees
  • In a large microwave-safe bowl, melt chocolate chips and butter at 50% power for 2 minutes until butter is melted; stir until smooth. 
  • Whisk in salt, sugar, cocoa powder, eggs, evaporated milk and vanilla.  
  • Whisk until well blended.
  • Pour into pie crust
  • Bake 30 minutes or until filling has puffed, but center still wiggles.  
  • Cool completely.  Refrigerate until ready to serve.
  • Garnish with whipped cream or chocolate shavings, if desired.
