Did you ever have mashed potatoes left over, and you didn't know what to do with them? Here is your answer, Mashed Potato Rolls. I must be honest, these are very mild in taste. They make great accompaniments for sliders, sandwiches, or to just sop up gravy. They freeze well too. Depending on size, they make between 2 1/2 to 4 dozen rolls.
1 package yeast
1/2 cup warm water
1 cup mashed potatoes
1/2 cup sugar
2 eggs
1 teaspoon salt (for this recipe, I would use the salt)
2/3 cup oil
1 cup milk, scalded
5 - 6 cups flour (I found the dough very moist, so I added additional flour. I used a small amount of wheat flour, and it worked just fine)
- Proof yeast in warm water with a small amount of sugar
- Mix potatoes, sugar, eggs, salt, oil and milk
- Stir in yeast and enough flour to make a stiff dough. Place in greased bowl and cover. Punch down and knead slightly
- Shape and let rise until doubled (approximately 1 1/2 hours)
- Bake 8 minutes at 400 degrees
